probably slugs. they love hostas. Go ahead and cut them back and next year put some diatamacious earth around them to keep the slugs off.

What do you think?

Yes, I would say go ahead and cut it back. Hostas tend to be pretty hardy and if you cut it back now they will either start growing new leaves or it will go dormant early for the winter. Slugs are almost definitely what are eating your hostas. What I do to keep slugs away from them is keep the mulch away from the stem of the plant to make sure the slugs don’t have a place to live and hide near the plant, and I planted chives around my hosta in order to repel the slugs. I have also heard that copper plates around the plants kills any slugs trying to reach them. Best of luck to you.
